3-501.16(A)(2): (A) Except during preparation, cooking, or cooling, or when time is used as the public health control as specified under §3-501.19, and except as specified under ¶ (B) and in ¶ (C ) of this section, TIME/TEMPERATURE CONTROL FOR SAFETY FOOD shall be maintained: (2) At 5ºC (41ºF) or less. The walk-in beer cooler was holding at 50. Facility uses it only for alcohol purposes and to hold some shelf stable food items. There was no Temperature controlled food items present in the cooler. If the facility wants to use this cooler to hold temperature controlled product, the cooler will need to be fixed. Facility is calling someone to check on the cooler. - (Correct By: Sep 15, 2023) |
